What is HACCP?

The HACCP stands for Hazard Analysis Critical Control Point.
HACPP is a sanitation control system that ensures the safety of foods by preventing them from being contaminated with any hazardous substances in all food production processes such as raw material control, preparation, processing, cooking and distribution. The HACCP stands for Hazard Analysis Critical Control Point.

HA(위해요소분석 :원료와 공정에서 발생가능한 병원성 미생물 등 생물학적, 화학적, 물리적 위해요소 분석) + CCP(중요관리점 : 위해요소를 예방, 제거 또는 허용수준으로 감소시킬 수 있는 공정이나 단계를 중점관리)

Hazard Analysis : Analysis of biological, chemical and physical hazards including pathogenic microorganisms that may be generated from raw materials and/or during the food production process

Critical Control Point : Critical control for processes or steps to prevent, remove, or reduce hazards to an allowable level
